Proper Disposal of Fats, Oils, and Grease

MEMPHIS, Tenn., September 15, 2025 – The City of Memphis Storm Water Department, in accordance with City Ordinance 4538, requires proper disposal of Fats, Oils, and Greases (FOG). When poured down a sink drain, FOG clings to pipes beneath your house and in the City’s sanitary sewer system. This can cause sewage to backup into your home. Clogged pipes can also become a health hazard by causing sewage overflows, which can discharge into the neighborhood and surrounding waterbodies posing a threat to fish and other aquatic life. Violators can be assessed civil penalties for improper disposal by the Storm Water Department.
Ways to Properly Dispose of FOG:
Proper Disposal of FOG in Homes:
Reuse cooking oil when possible; otherwise place the oil in a sealable container and dispose of it in your trash once cooled. Did you know that the City will provide you with a free sealable can cover to do this?
Call 901-636-8118 to can the grease! For large amounts, such as when deep-frying a turkey, allow the grease to cool in a safe container and then take it to the Shelby County Household Hazardous Waste Facility at 6305 Haley Road.
Proper Disposal of FOG for Restaurants:
Restaurants should have a grease trap to capture and prevent FOG from entering the municipal sewage system where it can cause blockages and environmental issues. Establishing routine maintenance and
cleaning of this system is crucial to prevent malfunctions. A certified waste hauler may be contacted in ensuring FOG waste is properly disposed.
Proper Disposal of FOG for Food Trucks:
Reuse cooking oil if possible; otherwise place the oil in a sealable container and dispose of it in the trash. If a FOG capturing unit has been installed, ensure that the unit is routinely maintained, cleaned, and FOG waste is appropriately disposed of by either a certified waste hauler or by placing the cooled waste into a sealable container for trash disposal as previously mentioned.
